Quince are one of those fruits that simply cannot be eaten raw but cooked in this Quince and Marzipan Cake it tastes unbelievably delicious and even changes color while after cooking. I am a total lover for Marzipan and together these ingredients make a heavenly tasty cake. It’s light and moist in texture making this a delightfully exciting morning tea treat!
To make Quince and Marzipan Cake, you will need the following ingredients:
In a large saucepan, combine boiling water and caster sugar and bring to a boil. Allow to bubble for a couple of minutes until sugar dissolves.
Cut the lemon in half and add to the pot with your chosen herbs and spices.
Add quince slices to the pot and top with more water so they are just covered.
Cut a circle of baking parchment paper to fit over the quinces in the pot, and pierce a 1-inch hole in the centre. Place over the quinces, touching the water and turn the heat down to a gentle simmer. Gently simmer for an hour or so, until the quinces are tender but still holding their shape.
Remove from the liquid with a slotted spoon and place on chopping board. Slice 3 or 4 segments, lengthwise, into 3 pieces so you end up with longer, slender pieces and chop the rest of the segments into 2cm dice. Set to dry on a piece of kitchen paper towel.
Preheat the oven to 190 °C (fan oven) and grease a 25cm cake tin or fluted tart tin with butter and line it with baking parchment paper.
In a large bowl, sift the flour and baking powder and add brown sugar, lemon zest and salt. Mix to combine.
In a separate bowl whisk the melted butter, eggs and buttermilk to combine.
Pour the wet ingredients into the bowl of dry ingredients and gently mix, using a spatula, to combine. Do not over mix.
Add quince cubes and marzipan into the mixture and fold together to evenly disperse.
Pour batter into prepared baking tin and arrange quince slices, in a decorative pattern, over the top of the cake.
Bake for 35-40 minutes until completely baked and a wooden skewer or a cake tester inserted into the center comes out clean. Scatter with almond flakes on top of the cake 5 minutes before taking it out of the oven.
Remove from oven and allow to cool before dusting with icing sugar.
Serve with a strong cup of tea and best enjoyed warm.
