2 tbsp Fresh thyme chopped, plus more for serving
2 cups Red Grapes
2 balls Burrata cheese or fresh mozzarella
2 tbsp extra virgin Olive oil
½ tsp Cayenne pepper
Kosher Salt to taste
Black pepper to taste
¼ cup All-purpose flour
4 slices thick cut Bacon cut into quarters
2 small Shallots thinly sliced
½ cup Balsamic vinegar
½ cup Apple cider vinegar
1 tbsp Honey

Season chicken

Season chicken by generously rubbing 1 tablespoon olive oil, thyme, cayenne pepper, salt and pepper all over.

Add flour

Toss the chicken in flour to coat.

In a large skillet over medium heat, cook the bacon until crispy. Transfer crispy bacon to paper towels and drain.

In the same skillet, heat 1 tablespoon oil and cook the shallots for about 3 minutes, until fragrant.

Add vinegar

Reduce the heat to medium low and add ½ cup water, balsamic vinegar and apple cider vinegar.

Add seared chicken and place the skillet in preheated oven and roast for 15 minutes.

Add grapes and honey

After 15 minutes, remove from the oven and add the grapes and then drizzle honey over the top. Return to oven for another 10-15 minutes until the chicken is cooked through.

Add the crispy bacon to the skillet and crumble the burrata over the chicken.
