Roasted Squash and Parmesan

This Roasted Squash and Parmesan recipe is super easy to make because rather than roasting it in the oven, it cooks in 5 minutes in the microwave! Every Mardi Gras, I like to gather some friends at my home and cook a big meal for them. One of the dishes I love to make is this simple squash bake. 

I start by slicing a variety of veggies such as green zucchini, yellow squash and red onion. I layer these in a microwave safe dish and sprinkle Parmesan cheese on top. When I am ready to cook this, I simply heat it in the microwave for 5-7 minutes. I find this dish can work as a main dish or as a side dish to complement the rest of my Mardi Gras feast.

    Arrange squash and zucchini in a dish

    Lay one-third of the squash and zucchini slices in a deep, microwave-safe dish. Drizzle 1 tablespoon olive oil over the vegetables. Season with salt and pepper.

    Repeat the layers with the remaining vegetables. Sprinkle cheese on top and cover the dish.
