For the Soup:
- 1 tbsp Vegetable oilor butter
- ½ a large Onionfinely diced
- 1-2 Carrotsshredded on large holes of box grater
- 2-3 Garlic cloveminced
- 3-5 Black peppercorns
- 1 Bay leaf
- 10 cups Water
- 3 medium Potatoeschopped
- Saltto taste
- Black pepperto taste
- ⅓ cup Long grain rice
- ½ tbsp Dried herbsoptional
- 1 tbsp Dillfor garnishing
For the Meatballs: (Frikadelki)
- 1 lb Ground chickenor ground turkey, pork or beef
- ½ cup Panko breadcrumbs
- ¼ cup Milk
- ¾ - 1 tsp Salt
- ¼ tsp ground Black pepper
- 1 Eggsslightly beaten
- ½ Oniongrated on the finest setting on the box grater, to form a pulp
- ½ tsp Dried herbsoptional
- ½ tsp Garlic powder
Russian Meatball Soup
This Russian Meatball Soup (“Soup with frikadelki”) recipe belongs to my dear grandmother. Originally from Russia and in true grandma style, she has her own, handwritten book of all the family recipes that she grew up on and this is one of them.
Chicken meatballs made with a little grated onion, dry herbs and garlic, for flavor and boiled in a vegetable soup broth combined of onions, carrots, garlic, peppercorns, bay leaves, potatoes, rice and dry herbs – we love it best for a whole dinner in a soup bowl!
