I make these Savory Breakfast Crepe Pockets on average once a month. They are quick and easy to prepare and my family adores them. I don’t know about you, but usually when I think of crepes, I think of sweet fillings but this savory recipe brings a nice new dimension to this French staple.

Start by sautéing spinach with onion and garlic to make the spinach filling. Make crepe batter by whisking flour, eggs, salt, and milk. Cook the crepes in a large non-stick pan. When the crepes are cooked, layer up the spinach filling with slices of cheese, ham and fried eggs. Fold the filled crepes to make savory pockets and bake in the oven for 5 minutes. Enjoy!

Steps to make Savory Breakfast Crepe Pockets

Heat oven

Preheat the oven to 350 °F.

Make filling

Sauté ½ an onion with 2 minced garlic cloves and 5 ounces of spinach.

Make crepe batter

Whisk 5 ounces of flour with 4 eggs, 1 teaspoon of salt and 12 fluid ounces of milk until smooth.

Cook crepes

Heat a nonstick pan over medium heat. Ladle approx ¼ cup of batter into the pan. Swirl until the base of the pan is coated. Cook the crepe on both sides until golden brown (about 2 minutes). Repeat until the crepe batter is used.

Assemble crepes

Transfer each crepe to a sheet pan and assemble by starting with a layer spinach filling. Add a slice of cheese, another layer of spinach filling, a slice of ham, more spinach filling and top with a fried egg.

Fold

Fold each crepe into a small pocket shape.

Bake

Bake the crepes in the oven for about 5 minutes.

Serve

Serve the savory crepes garnished with chopped chives.
