Shamrock Cookies
Shamrock Cookies are delicious peppermint green cookies which are perfect for St Patrick’s Day. As we all know, the shamrock is a symbol of Ireland. Shamrock is recognizable due to its appearance – 3 heart shaped leaves and the plant is linked to Ireland’s patron saint, St Patrick.
These St Patrick’s Day cookies are pretty simple to make too. Start by making cookie dough from by creaming shortening and confectioners sugar until it is light and fluffy. Beat in egg and extract and add flour and salt gradually. A few drops of green food coloring will give the cookie dough a pale green color.

Baked for the recommended time but it turned out kinda burnt on the bottom, will shorten the time in the oven when i bake these again.
Took me a while to get the shape right since I had to use a knife to make it but totally worth it, these are super cute.

Too much peppermint, I recommend adding half a tsp rather than a full one..was too minty.

Kinda dry and become rock hard after a day and a half but when freshly baked these are the BEST kinds of cookies.
Wanted to make them all different colors instead of just green so used a bunch of different food coloring on seperate pieces, turned out awesome.
Drizzled it in mint and white chocolate to make it look extra unique, very tasty.
