Preheat oven

Preheat oven to 350 ºF.

In a large saucepan, melt the butter, over a low heat. Stir in the flour, salt and pepper, until smooth.

Add milk

Gradually add the milk and bring to a boil; cook and stir for 2 minutes, until the sauce has thickened.

Add cheese

Remove from the heat and stir in the cheese, allowing it to melt.

Add potatoes and onion

Add the potatoes and chopped onions.

Transfer to a greased 2-qt baking dish. Cover and bake for 1 hour. Uncover and bake for a further 30-40 minutes, until the potatoes are tender.

If desired, top with pink peppercorn, fresh parsley and green onion, and serve hot!
