This warm Skillet Baked Pear and Apple Crisp is a winter’s night dessert delight. Served in a rustic way and baked in an ovenproof skillet, almost like an apple pie, with an apple and pear bubbling center and a crunchy, nutty topping. There are currants in the filling and pecans in the topping for added texture and flavor and with a hint of Cognac to warm the heart!
To make Skillet Baked Pear and Apple Crisp, you will need the following ingredients:
Preheat the oven to 350 °F and grease a 12-inch cast-iron skillet with butter.
In a food processor, combine 1 cup of light brown sugar, 1 cup of all-purpose flour, ¼ cup pecans and 2 teaspoons of ground cinnamon.
Add 1 stick of butter, cut into pieces, and pulse a few times until the mixture is fine.
Transfer the dough mixture to a bowl and gently press into clumps.
In another large bowl, combine 1½ pounds of thinly sliced apples and 1½ pounds of thinly sliced pears with ½ cup of currants, ¼ cup of light brown sugar, 2 teaspoons of ground cinnamon, ¼ teaspoon of ground cardamom, ¼ cup of honey and 2 tablespoons of Cognac. Mix gently until sugar is completely dissolved.
Spread fruit mixture over the base of the prepared skillet and top with the prepared clumped topping.
Bake in the preheated oven for about 1 hour until the center is bubbling and the top is browned.
Allow to cool for about 20 minutes before serving.
