Ingredients

For the Topping
1 cup Brown sugar light
1 cup All-purpose flour
¼ cup Pecans
2 tsp Cinnamon ground
1 stick Unsalted butter cut into cubes
For the Filling
1½ pounds Granny Smith apples peeled, cored and thinly sliced
1½ pounds Bartlett Pears firm, peeled, cored and thinly sliced
½ cup Blackcurrant fresh or frozen
¼ cup Brown sugar light
2 tsp Cinnamon ground
¼ tsp Ground cardamom
¼ cup Honey
2 tbsp Cognac
For serving:
Vanilla ice cream

This warm Skillet Baked Pear and Apple Crisp is a winter’s night dessert delight. Served in a rustic way and baked in an ovenproof skillet, almost like an apple pie, with an apple and pear bubbling center and a crunchy, nutty topping. There are currants in the filling and pecans in the topping for added texture and flavor and with a hint of Cognac to warm the heart!

Steps to make Skillet Baked Pear and Apple Crisp

Preheat oven and prepare skillet

Preheat the oven to 350 °F and grease a 12-inch cast-iron skillet with butter.

Combine topping

In a food processor, combine 1 cup of light brown sugar, 1 cup of all-purpose flour, ¼ cup pecans and 2 teaspoons of ground cinnamon.

Add butter

Add 1 stick of butter, cut into pieces, and pulse a few times until the mixture is fine.

Press topping

Transfer the dough mixture to a bowl and gently press into clumps.

Combine fruit filling

In another large bowl, combine 1½ pounds of thinly sliced apples and 1½ pounds of thinly sliced pears with ½ cup of currants, ¼ cup of light brown sugar, 2 teaspoons of ground cinnamon, ¼ teaspoon of ground cardamom, ¼ cup of honey and 2 tablespoons of Cognac. Mix gently until sugar is completely dissolved.

Prepare pie for baking

Spread fruit mixture over the base of the prepared skillet and top with the prepared clumped topping.

Bake in the preheated oven for about 1 hour until the center is bubbling and the top is browned.

Allow to cool for about 20 minutes before serving.
