In another large bowl, combine 1½ pounds of thinly sliced apples and 1½ pounds of thinly sliced pears with ½ cup of currants, ¼ cup of light brown sugar, 2 teaspoons of ground cinnamon, ¼ teaspoon of ground cardamom, ¼ cup of honey and 2 tablespoons of Cognac. Mix gently until sugar is completely dissolved.

Takes a pretty dang long time to make this but it's delicious, I liked the apple pie toast a lot more though.
