To make this Slow Cooker Beef Bourguignon, you will need the following ingredients:
In a large skillet over medium-high heat, cook finely chopped bacon until crisp, about 4-5 minutes.
Transfer the bacon to a slow cooker.
Season the beef with salt and black pepper and add to the skillet. Sear the beef on each side for 2-3 minutes. Cook in batches if needed.
Transfer the beef to the slow cooker.
Add 1 cup red wine to the same skillet and stir with a wooden spoon to deglaze and dissolve meat juices. bring to a simmer.
Allow the wine to simmer and reduce slightly, then slowly add 2 cups chicken broth, ½ cup tomato sauce, and ¼ cup soy sauce.
Slowly whisk in ¼ cup flour.

Add 3 sliced garlic cloves, 2 tablespoons thyme, 5 sliced carrots, 1 pound baby potatoes, and 8 ounces sliced mushrooms to the slow cooker. Stir to combine.
Cover and cook on Low for 8 hours or High for 6 hours.
Garnish with fresh parsley and serve with mashed potatoes or rice.
