This Slow Cooker Creamed Corn recipe comes in handy when you need to feed a crowd without much fuss. It can be made from frozen, canned, or fresh kernels, depending on what you have on hand. Sweet corn simmered low and slow with milk, butter, and cream cheese until each corn kernel is plump, sweet, and milky. Delicious! Best of all, this side dish can stay nicely hot in the slow cooker thanks to the keep-warm setting, making it a great addition to the Thanksgiving buffet.
The recipe is super simple to make and needs just seven ingredients. Just throw all the ingredients in the slow cooker for a few hours, then bring it directly to the buffet table. Once cooked, stir the corn gently until the cream cheese, milk, and butter come together into a rich, creamy sauce. Taste and adjust the seasoning. Let the corn stand for a while on the warm setting to give the sauce time to set. Stir again and check the consistency. If the sauce is too thick, stir in some milk. If the sauce is too thin, let it stand for a few more minutes. It will continue to thicken as it stands.
To make this Slow Cooker Creamed Corn, you will need the following ingredients:
Combine 2 pounds corn kernels, 1 tablespoon sugar if using, and 1 teaspoon salt in the bowl of a slow cooker
Pour 1 cup whole or 2% milk over the top of the corn.
Scatter 4 tablespoons cubed butter and 8 ounces cubed cream cheese over the surface of the corn. Don’t mix them in.
Cover the slow cooker with a lid and cook on high for 2 to 3 hours or on low for 4 to 6 hours.
Stir the corn once during the second half of cooking to fold the cream cheese and butter into the corn and prevent a crust from forming around the edge.
Once cooked, stir the corn thoroughly until the cream cheese, milk, and butter come together into a creamy sauce. Taste and adjust with salt or sugar. Season with black pepper to taste. Let the corn stand for a few minutes on the warm setting to give the sauce time to set. Stir again and check the consistency. If it is too thick, stir in some milk. If the sauce is too thin, let it stand for a few more minutes. It will continue to thicken as it stands.
Garnish with additional black pepper and serve. Enjoy!
