This Smoky Cheese and Onion Tart is definitely one of my personal favorites and I may have even convinced my daughters too. A short crust pastry filled with a creamy-cheese filling, smokey bacon bits, onion slices and cherry tomatoes, baked in the oven until set.
Perfect for lunch or a light dinner. This tart is not too heavy and satisfies perfectly, paired with a glass of Sauvignon Blanc!
To make Smokey Cheese and Onion Tart, you will need the following ingredients:
Preheat the oven to 425 °F (220 °C/200 °C fan/gas 7).
In a large frying pan, melt a small knob of butter and add 6 slices of chopped bacon pieces. Cook for about 6 minutes until fried and crispy.
Add 3 thinly sliced onions and continue cooking for about 10 minutes until softened.
Pour in 200 ml of heavy cream, stir through then remove from the heat.
Roll out the pastry onto a lightly floured surface into a rectangular shape then place on a baking sheet. Fold the edges over to make slightly raised border edges.
Transfer the onion mixture to a mixing bowl and add 70 grams of grated cheese and some of the beaten egg then mix to combine. Spread into the prepared pastry.
Top with 140 grams of tomato halves and sprinkles of 70 grams of crumbled cheese.
Brush the pastry edges with the remaining beaten egg wash.
Bake in the preheated oven for about 20 minutes until cooked in the center and golden on the outer edges.
Cool before cutting into tart squares and enjoy!
