Ingredients

1 tbsp Olive oil
4 cloves Garlic sliced
a few pinches Chili flakes to taste
1 tsp Smoked Paprika
1/2 tsp Dried oregano
1/4 tsp Red wine vinegar
1/2 tsp Brown sugar
1 can (14oz) White beans drained and rinsed
2 cans (28oz) Plum tomato whole tinned
8.8 oz Halloumi cheese sliced lengthways and then widthways into slabs
Parsley to garnish

This Smoky Tomato & Halloumi Bake recipe uses one of my favorite cheeses – halloumi cheese or “squeaky cheese” as we like to call it!

Halloumi is a salty sheep / goats milk cheese which originates in Cyprus. It has a firm texture when it is cooked, and this causes it to squeak on the teeth when you chew it, hence the name “squeaky cheese”. Halloumi’s robust texture means that it is great grilled, barbecued, fried or baked, like in this Smoky Tomato & Halloumi Bake recipe.

This delicious recipe takes halloumi and white beans and bakes them in a rich, smoky, Spanish inspired tomato sauce! It is so quick and simple to make – it will be on the table in only 35 minutes. When I make it, I serve it in the same baking dish on the table and allow everyone to help themselves.

So, how do you make Smoky Tomato & Halloumi Bake?

Steps to make Smoky Tomato and Halloumi Bake

Heat the oven

Preheat the oven to 390 ºF.

Sauté garlic

Heat some olive oil in a baking dish and fry your sliced garlic until it begins to brown.

Add paprika and oregano

Stir in the smoked paprika and oregano and allow to cook for a moment until they are fragrant.

Add tomatoes, sugar and vinegar

Add the tomatoes, sugar and red wine vinegar. Stir well and allow the sauce to simmer for about 5 minutes.

Add the beans

Combine your chosen white beans with the sauce.

Place the halloumi on top

Remove the dish from the heat and lay the halloumi on top of the sauce.

Bake

Bake in the oven for 20 minutes until the sauce is bubbling.

Broil

For the last 5 minutes, place the dish under the broiler so that the halloumi becomes brown on top.

Serve

Garnish with parsley or coriander and serve in the dish in the middle of the table with pita bread on the side for mopping up the amazing sauce.
