According to my teenagers, all the cool kids are making Sourdough Pancakes and so in true Lilly style, I had to get ahead of the game and of course this recipe. A simple pancake recipe adding sourdough starter, which if you haven’t heard, is the new health craze that helps boost the metabolism. I love mine with melted butter, syrup and berries, but a sprinkle of cinnamon and sugar works just as good, too!

To make Sourdough Pancakes, you will need the following ingredients:

Steps to make Sourdough Pancakes

Combine dry ingredients

In a large bowl, whisk 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 2 tablespoons of sugar and 1 teaspoon salt until combined.

Add wet ingredients

Pour in 1 cup of sourdough starter, 1½ cups of milk, 1 beaten egg and 2 tablespoons of oil and then mix well until just combined and smooth.

Prepare and preheat pan

Generously grease and preheat a non-stick pan with cooking spray or some butter.

Cook pancakes

Pour ¼ cup of the prepared pancake mixture onto the hot griddle and cook for a few minutes until bubbling. Flip and cook for another 1-2 minutes until golden and cooked through the middle.

Serve

Best served warm with butter and syrup, or cinnamon and sugar, if you wish!
