This Spiced Apple-Mascarpone Bundt Cake recipe is a delicious cake which I love to make for special occasions, especially in fall when I try to add a little bit of spice to my baking! I use a bundt pan for this because I simply love the interesting shape it provides! The special ingredient in this cake is mascarpone, a rich and creamy cheese which originated in Lombardy in Italy, where it is typically made during the fall and winter months.
To make this, start by making a cake batter from sugar, eggs, flour, vanilla and fall spices like nutmeg and cinnamon. Fold in apple chunks. Transfer the batter to a bundt pan with some mascarpone and bake in the oven. As the cake cools, make a vanilla drizzle using confectioners sugar, vanilla extract, milk and mascarpone. Once the cake has cooled, pour the drizzle over the it and top with chopped walnuts.
To make Spiced Apple-Mascarpone Bundt Cake, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly grease and flour a 10 inch bundt pan.
Mix ¾ cup of softened butter and 1 cup sugar together in a bowl until they are creamed and fluffy.
Add 2 large eggs to the creamed butter and sugar one at a time - beat until fully combined after each addition.
Beat in 1 tablespoon of vanilla.
In a separate large bowl, sift together 2 ¼ cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ a teaspoon of baking soda, ½ a teaspoon of salt, 4 teaspoons of ground cinnamon, ½ a teaspoon of ground nutmeg and ¼ teaspoon of ground cloves.
Gradually add the flour mixture and 1 cup of sour cream to the wet ingredients. Alternate additions and beat well after each one.
Fold in three diced apples.
Transfer half of the batter into the prepared pan.
Set 2 tablespoons of the mascarpone cheese aside. Place the remaining mascarpone in a small bowl and combine with 1 cup of confectioners' sugar and the remaining 2 tablespoons of flour. Spoon this mixture evenly over the batter and add the remaining batter on top. Swirl with a knife.
Bake for 55-60 minutes until a toothpick inserted comes out clean.
Allow the cake to cool in the tin for about 15 minutes before transferring to a wire rack to cool completely.
Combine ⅔ cup of confectioners' sugar with 1 teaspoon of vanilla extract, 1 teaspoon of milk and the remaining 2 tablespoons of mascarpone in a microwave-safe bowl. Microwave on high, whisking every 20 seconds until smooth.
Pour the vanilla drizzle over the cooled cake. Sprinkle with walnuts if desired.
Serve slices of this delicious bundt with a cup of your favorite tea or coffee.
