This Spiced Pear Cake recipe is easy to make (no mixer required) and delivers big on flavor. Topped with thin slices of fresh pears, laced with warming spices, and sweetened with brown sugar, this beautiful cake is sure to become a family favorite. Simple and delicious, it makes for a perfect snacking cake or a dessert if served with a drizzle of caramel sauce and a scoop of ice cream.
To begin, whisk together the wet ingredients and sugar in a large mixing bowl. Use a smaller bowl to combine the dry ingredients and spices. Add the dry mixture to the wet ingredients and stir just until combined. Thinly slice the pears. Transfer the batter to a loaf pan and arrange the pear slices on top of the batter. Sprinkle the top with a pinch of oats and bake the cake in the oven. Allow to cool, and dust with powdered sugar. Cut the cake into thick slices and serve.
To make the Spiced Pear Cake, you will need the following ingredients:
Preheat the oven to 350 °F and spray a 9x5-inch (23cm x 13cm) loaf pan with cooking spray. Set aside.
In a large bowl, whisk together ½ cup melted butter, ¼ cup vegetable oil, ¾ cup brown sugar, 3 eggs, ⅓ cup water, and 1 ½ teaspoons vanilla extract.
In a medium bowl, whisk together 1 ¾ cups all-purpose flour, 1 teaspoon baking powder, ¾ teaspoon salt, 1 teaspoon cinnamon, ¼ teaspoon ground ginger, ¼ teaspoon nutmeg, and ⅛ teaspoon ground cloves.
Add the dry ingredients in thirds to the wet ingredients, whisking until just combined.
Pour the batter into the prepared loaf pan. Smooth the batter using the back of a spoon.
Place the pear on a cutting board with the stem facing up. Cut off each side of the pear, avoiding the core. Slice each pear slice into ¼-inch thick slices.
Arrange the pear slices on top of the batter in an alternating pattern, spacing them about ¼-inch apart. Sprinkle the top of the cake with 1 tablespoon oats.
Bake in the oven for 40-45 minutes until golden brown and risen or a skewer inserted in the center comes out clean. Once baked, allow to cool for 10 minutes in the pan. Remove the cake from the pan and cool on a wire cooling rack.
Dust the cake with powdered sugar. Slice and serve!
