Have a great morning with this Spinach Millet Egg Bake. This is a perfect way to start your day and makes enough for your family and/or friends too. This is a vegetarian recipe made with vegetarian Parmesan cheese, but you can adapt and use regular, if you wish. Similar to a spinach quiche or pie, this calls for a combination of whole grain millet, spinach, eggs, milk, salt, dill, and Parmesan baked in the oven until set and puffy!
To make Spinach Millet Egg Bake, you will need the following ingredients:
In a medium pot over low heat, toast ½ cup of millet for about 2-3 minutes.
Add 1½ cups of water and a pinch of salt. Bring to a boil then reduce the heat and simmer for about 15 minutes until cooked and the water is completely absorbed.
Preheat the oven to 375 °F. Grease an 8x8-inch baking dish.
Transfer the cooked millet to baking dish and toss with 2 cups of roughly chopped spinach.
In a medium bowl, whisk 4 large eggs, ½ cup of whole milk, ½ teaspoon of salt and 2 tablespoons of fresh dill together until combined then pour over the spinach and millet mixture and gently press down to cover.
Cover with ½ cup of shredded vegetarian Parmesan cheese and gently press into the spinach and egg mixture.
Bake in the preheated oven for 25-30 minutes until the eggs have set and are puffy.
Serve hot and enjoy!
