These Stacking Snowmen Biscuits are a classic Christmas favorite and my children wait all year to help me prepare them for our family dinner.

This recipe reminds me of my childhood when I would make them with my grandmother and now I am passing this recipe onto you as a treat for your children during this festival of goodwill and good cheer!

Steps to make Stacking Snowmen Biscuits

Preheat oven

Preheat the oven to gas 5, 180 °C, fan 160 °C.

Combine dry ingredients

In a mixing bowl, combine flour and sugar together.

Add butter

Using your fingertips, or a food mixer, add butter and rub together until fine breadcrumbs form.

Add egg

Add egg and mix well until soft dough begins to come together.

Prepare dough rounds

On a lightly floured surface, roll out the dough to 4mm thickness. Stamp out 8 circles in 11cm, 8x8cm circles and 8x5cm circles and place them on two greased baking sheets.

Bake

Bake in preheated oven for 8-12 minutes until edges are lightly golden and the center is still pale. Smaller biscuits may bake quicker than the larger ones, so remove from the oven as ready. Cool on a wire rack.

Prepare fondant rounds

Using a piping bag, outline and flood the snowman cookie circles with royal icing.

Brush with jam

Brush each cookie with a thin layer of jam, all over and place relevant fondant rounds over each cookie with corresponding size.

Stack cookies

Place 11cm iced cookies on a large board and place a tiny drop of jam in the center of each. Top with the 8cm iced cookie and follow the same steps for the 5cm ice cookie to stack them to look like fat snowmen.

Draw faces

Using black food colouring marker or writing icing, draw faces on each snowman.

Draw noses

Using orange food colouring marker or writing icing, draw tiny carrot noses on each snowman.
