To make this cake start by mixing together eggs, sugar, and sour cream. Add lemon zest and extract and mix in dry ingredients. Mix together until you have a smooth batter. To make the Starbucks Lemon Loaf Copycat, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly spray a loaf pan with cooking spray.
Place 3 large eggs, 1 cup of granulated sugar, and 1 cup of sour cream in a large bowl and whisk vigorously until smooth.
Drizzle in ½ a cup of oil while whisking constantly.
Add 2 tablespoons of lemon zest and 1-2 tablespoons of lemon extract. Whisk until fully combined.
Add 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and ½ a teaspoon of salt. Stir until just combined, don’t overmix even though there may be some lumps.
Transfer the batter to the prepared pan and use a spatula to smooth the top.
Bake the cake in the oven for 50-52 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs. 10 minutes before the cake is cooked, tent the pan with a sheet of foil to keep the cake from browning too much on the top and sides.
Let the cake cool in the pan for at least 30 minutes before transferring to a wire rack and leaving it cool down completely.
Mix 1 cup of confectioners’ sugar and 3 tablespoons of lemon juice. Whisk until smooth. The consistency should be pourable enough to drizzle.
Drizzle the glaze evenly over the loaf before slicing and serving.
