To make Strawberry Chicken Salad with Pecans, you will need the following ingredients:
In a medium sized bowl, whisk together 1 tablespoon oil, vinegar, honey, thyme, 1/4 teaspoon pepper, and 1/8 teaspoon salt. Add 1 cup strawberries and toss well to coat. Let the strawberries marinade for 10 minutes, at a room temperature.
Heat a medium sized skillet to a medium-high heat.
Season both sides of the chicken with 1 teaspoon oil, ⅛ teaspoon pepper, salt and paprika.
Coat the pan with cooking spray and add the chicken. Cook for 2-3 minutes on both sides, until cooked. Once cooked, remove the chicken from the pan and let stand for 5 minutes before cutting the chicken across the grain, into slices.
To serve, divide the spinach, 1 cup fresh strawberries and chopped onion onto 2 plates. Top with even chicken slices and the marinated strawberries. Garnish with ½ tablespoon pecans and 2 tablespoons crumbled cheese on top of each serving.
