2 tbsp Olive oil extra-virgin
½ large Onion chopped
3 cloves Garlic minced
2 tbsp Tomato paste
1 (28 oz) Can crushed tomatoes
2 tbsp Balsamic vinegar
1 tbsp Sugar
2 tsp Dried oregano
Kosher Salt optional
Black pepper optional
For the cabbage rolls
15 leaves Cabbage
1 lb Ground beef
¼ cup White rice uncooked
¼ cup Bread crumbs
½ large Onion chopped
2 tbsp Parsley freshly chopped, plus more for garnish

Stuffed Cabbage

Stuffed Cabbage is a great way to up your family’s intake of this super healthy vegetable. Cabbage is packed with nutrients and is a great source of Vitamin C and Vitamin K. It can help to improve digestion and may help keep your heart healthy while lowering blood pressure too. What’s not to love?

I start by making a tomato based sauce for the stuffed cabbage. Before making the cabbage rolls, blanch the cabbage leaves in a pan of boiling water. Using a paring knife, cut away the hard triangular stem from each leaf. Make a filling from ground beef, white rice, bread crumbs, chopped onion and chopped parsley. Roll up the filling in cabbage leaves and arrange them in the baking dish and pour the remaining sauce over the top. Bake in the oven and enjoy!

Heat the oven

Preheat the oven to 350 °F.

Make the sauce

Pour 2 tbsp olive oil in a large skillet and heat over medium heat. Cook ½ a large onion for 5 minutes until soft. Add the tomato paste and garlic. Stir well and cook for a minute until fragrant. Add the can of crushed tomatoes and 2 tbsp balsamic vinegar, 1 tbsp sugar and 2 tsp of dried oregano. Mix well and reduce heat to medium-low.

Simmer sauce

Simmer the sauce for 20 minutes. Season to taste with kosher salt and freshly ground black pepper.

Blanch cabbage leaves

Place 15 cabbage leaves in a large pot of boiling water and blanch the leaves for about one minute until they are tender and flexible. Set aside. Once cool, use a paring knife to cut out the hard triangular rib from each leaf.

Make the filling

Combine 1 lb of ground beef with one cup of sauce, ¼ cup uncooked white rice, ¼ cup bread crumbs, ½ large onion and 2 tbsp freshly chopped parsley in a large bowl. Mix well and season to taste with salt and pepper.

Assemble the casserole

Spread a thin layer of the tomato sauce at the bottom of a large baking dish. Spoon about ⅓ of a cup of filling into one end of each leaf. Roll the leaf up tight and tuck the sides in as you roll. Place the cabbage rolls seam down on the sauce in the baking dish. Pour the remaining sauce over cabbage rolls

Cover the baking dish with foil and bake in the oven for 1 hour 15 minutes until cooked through.

Serve

Serve garnished with parsley.
