Follow our recipe to make the best homemade mini pumpkin bread rolls made from pumpkin puree, pumpkin pie spice, yeast, milk, a bit of sugar, butter and all-purpose flour. Stuff each roll with cream and bake in the oven. Don’t forget to use kitchen wire to shape the pumpkins and place a walnut half in the top to replace the pumpkin stem.
To make Cream Cheese Stuffed Pumpkin Dinner Rolls, you will need the following ingredients:
In a small bowl, stir yeast, 110 °F heated milk and granulated sugar together. Set aside for about 10 minutes to rise and froth.
In a mixing bowl, using a stand mixer, beat yeast, brown sugar, butter, salt, pumpkin pie spice, eggs, pumpkin puree and flour, until combined.
Switch attachment to a dough hook and knead for about 8-10 minutes until smooth and soft.
Place dough in a lightly greased bowl, cover with plastic wrap and set aside to rise for about an hour until volume has doubled in size. Once risen, divide into 16 pieces.
Stuff dough ball with a cube of cream cheese and wrap, individually in kitchen twine, making a pumpkin shape. Do not wrap too tightly as dough changes shape when proofing and baking.
Cover balls lightly, with a linen cloth and set aside for 1-1½ hours to proof and double in size.
Create an indent in the top of each pumpkin for each pecan stem to be placed, after baking.
Bake in a preheated oven at 350 °F for 20-25 minutes until baked through and golden.
Brush with melted butter and allow to cool, then remove twine and place a walnut stem in the top. Serve warm.
