For the salad
- ½ Red onion
- ½ large English cucumber

- 15 oz , 1 can Chickpeasdrained and rinsed

This Three Bean Salad is a protein filled, vegan salad that tastes absolutely amazing.
This salad tastes delicious and it packs a protein punch which will keep you feeling full from lunch all the way to dinner.
It couldn’t be easier to make this salad. I start by assembling the salad ingredients in a large salad bowl. Then I prepare a dressing using olive oil, vinegar, oregano, salt and pepper. I often serve it immediately, but it will keep for a few days in the refrigerator if you need to make it in advance.

Toss some cheese inside and a bit of bacon bits then you got yourself the perfect lunch (not a vegan sorry!)
Needs some dressing on the top or even a bit of sourcream.

Bean salad was not really what I had in mind when I came on this website but honestly tasted way better than what I expected glad I gave it a try.
My kids absolutely refuse to eat beans when I toss them in their rice but because of how colorful this bowl of bean salad looks they tried them out. They didn't like it of course but I atleast got them to try it lol.
