Recipe Description

Bread is one of my favorite things to make. I use bread making as a form of therapy. This Thrifty Homemade Sandwich Bread is a good example of that. You need very few ingredients to make this bread – mainly flour and yeast. And some time and patience while the dough rises!

Start by mixing yeast with sugar and hot water. Using a stand mixer with a dough hook, mix the yeast mixture with flour, oil, and salt to form a dough. Leave the dough to rise and double before shaping it into a loaf. Leave to rise again before baking. Once cool, this bread is ready to use with your favorite sandwich fillings!

    Combine yeast, water and sugar

    Mix 1 cup of hot water with 2 tablespoons of sugar and 2¾ teaspoons of yeast. Leave for about 10 minutes while the yeast "blooms".

    Transfer the yeast mixture to the bowl of a stand mixer.

    Add ¼ cup of vegetable oil, 1½ teaspoons of salt and add the flour, one cup at a time, while mixing with the dough hook. Mix for a few minutes until dough sticks to the bread hook and doesn't stick to the bowl. Continue to mix the dough for 3-4 minutes more after the non-sticky dough forms.

    Transfer the dough ball to a large bowl and cover with a light kitchen towel. Leave the dough to rise for approximately 90 minutes or until the dough has doubled in size.

    Once the dough has doubled in size, place it on a lightly floured surface. Punch the air out of the dough and shape it into a loaf. Place it in a lightly oiled loaf tin and cover loosely with plastic wrap.

    Leave the loaf for one hour until it rises to almost double its size.
