The recipe starts with cooking the corn. Just add the corn into a saucepan of boiling water and let it heat through. Rinse under cold water and drain well. Now, whisk the eggs and stir in the milk and flour. That’s the batter. Add in the zucchini and corn and fold in the tuna. Season to taste. Cook the fritters for 2 to 3 minutes per side or until golden brown. These delicious fritters are at their best served with the sweet chili sauce and a simple salad. Enjoy!

Cook corn

Cook 2 cups corn in a saucepan of boiling water until heated through. Refresh under cold water and drain well.

Whisk eggs

In a large bowl, whisk 2 extra large eggs.

Make batter

Add ÂĽ cup whole milk and â…” cup self-rising flour and stir until a smooth batter forms.

Add corn and zucchini

Stir in the drained corn and 1 coarsely grated zucchini. Season to taste.

Add tuna

Gently fold in 425 grams coarsely flaked tuna.

Heat a generous swirl of olive oil in a non-stick frying pan. Pour four ÂĽ-cup portions of the mixture in the pan. Allow space for spreading. Cook for 2-3 minutes, flip and cook for another 2 minutes or until cooked. Remove and repeat, in batches, with the remaining tuna mixture.

Serve

Serve the tuna and corn fritters hot with the sweet chili sauce and salad.
