Tuna and Corn Fritters

Tuna and Corn Fritters are a super cheap and delicious way to make a simple dinner out of just six ingredients. Deliciously crispy and packed with protein, they are simple to prepare and easy to cook. As easy, quick, and satisfying as a weeknight dinner can get. 

The recipe starts with cooking the corn. Just add the corn into a saucepan of boiling water and let it heat through. Rinse under cold water and drain well. Now, whisk the eggs and stir in the milk and flour. That’s the batter. Add in the zucchini and corn and fold in the tuna. Season to taste. Cook the fritters for 2 to 3 minutes per side or until golden brown. These delicious fritters are at their best served with the sweet chili sauce and a simple salad. Enjoy!

    Heat a generous swirl of olive oil in a non-stick frying pan. Pour four ¼-cup portions of the mixture in the pan. Allow space for spreading. Cook for 2-3 minutes, flip and cook for another 2 minutes or until cooked. Remove and repeat, in batches, with the remaining tuna mixture.
