Ingredients

2 tsp Active dry yeast
½ cup Brown sugar plus 1 tbsp packed , divided
1 cup Milk warm 2% (110° to 115°)
1 cup Bananas about 2 large, ripe , mashed
Large eggs room temperature
2 tbsp Butter melted
1 tsp Salt
1 tsp Cinnamon ground
5¼ to 5¾ cups All-purpose flour
2 tsp banana extract, optional
For the Glaze:
⅔ cup Brown sugar packed
½ cup Half-and-half cream
6 tbsp Butter cubed
For the Coating:
¾ cup Pecans chopped , toasted
6 tbsp Butter melted
2 ½ tsp ground Cinnamon
1 Bananas large, sliced

Upside-Down Banana Monkey Bread

Warm and yummy, this Upside-Down Banana Monkey Bread recipe is one of my favorites. Soft dough balls dipped in melted butter and coated in cinnamon sugar, over a glaze which is first added to the baking pan with a layer of toasted pecans so that once baked and turned out, you have an “upside-down”-like bread. Top with a sweet, butter and cream glaze and banana slices.

Steps to make Upside-Down Banana Monkey Bread

Activate yeast

In a small bowl, dissolve 2 teaspoons of active dry yeast and 1 tablespoon brown sugar in 1 cup of warm milk. Set aside.

Combine batter ingredients

In a large bowl, using an electric beater, beat on medium speed, 1 cup of mashed bananas, 1 egg, 2 tablespoons of butter, activated yeast, 1 teaspoon salt, 1 teaspoon ground cinnamon, 1½ cup of flour and remaining ½ cup of brown sugar and if using, adding 2 teaspoons of banana extract for extra flavor until a soft and sticky dough forms.

Add remaining flour

Add remaining 4 cups of flour and mix until combined.

Knead dough

Roll dough out onto a lightly floured surface and knead for about 6-8 minutes until smooth and elastic.

Rise

Lightly grease a bowl and place dough. Cover with plastic wrap and set aside in a warm place for about 1 hour to rise until doubled in volume.

Prepare glaze

In a small saucepan, stir ⅔ cup brown sugar, ½ cup half-and-half cream and 6 tablespoons of butter until combined then bring to a boil while continuously stirring and mixing.

Fill baking pan

Set ¼ cup of glaze aside to top monkey bread and pour the remaining into a greased 13x9-inch baking pan.

Add pecans

Fill the base of the pan with ¾ cup of toasted pecans.

Prepare filling bowls

Prepare 1 bowl of melted butter and 1 bowl of cinnamon and sugar mixed.

Prepare dough balls

Once risen, punch through dough to release excess air and turn out onto a lightly floured surface. Divide and roll into 48 ball shapes.

Coat balls

Dip rolled dough balls into the butter to coat and then follow with cinnamon and sugar mix all over. Place into the prepared baking pan over the toasted pecans.

Second rise

Cover with a kitchen towel and set aside in a warm place for about 30 minutes to rise again until almost doubled in volume.

Preheat oven

Preheat the oven to 375 °F.

Bake

Bake in the preheated oven for about 25-30 minutes until golden brown on top. Cool in the pan for 5 minutes.

Serve

Turn monkey bread out onto a serving plate and top with banana slices and drizzle remaining glaze over. Serve warm.
