This Upside Down Winter Citrus Cake is super pretty and pretty easy to make too! I love how the different citrus fruit slices look when this upside down cake is turned out onto a serving plate. To prepare the citrus slices, cut each one into ½ inch thick slices with the skin still on. Take each slice and cut off the skin carefully. By doing it this way, you will ensure that your citrus slices stay intact and will not break apart when you slice the cake.
Line the bottom of a cake pan with citrus slices and sugar- water syrup. Make a cake batter by beating butter, white and brown sugar together until light and fluffy. Add eggs, orange juice and zest, vanilla extract, flour and yogurt. Pour the batter over the citrus slices and bake in the oven. Invert the cake onto a serving plate so that the caramelized citrus slices are on display.
To make Upside Down Winter Citrus Cake, you will need the following ingredients:
Preheat oven to 350 °F. Line a 9 inch cake pan with parchment paper. Ensure that the paper covers the bottom of the pan and goes right up the sides. Fold the parchment paper so that it hangs down over the sides of the pan and spray with non-stick spray.
Slice each citrus fruit ½ inch thick. Using a paring knife, carefully cut off the skin from each citrus slice.
Place ½ a cup of granulated sugar and ¼ cup of water in a microwaveable bowl. Microwave for 45 seconds until the sugar dissolves completely.
Pour half of the syrup into the bottom of the cake pan. Place citrus slices in the pan so that they line the bottom. Once all the citrus slices are in the pan, pour the rest of the syrup over the citrus fruit and set to one side.
Beat ½ cup of butter and ½ cup of white and ½ cup of brown sugar together until light and fluffy. Mix in 2 eggs, 3 tbsp of orange juice, 1 tbsp of orange zest, and 1 tbsp of vanilla extract.
Combine 1 ½ cups of flour, 1 tsp baking powder ¼ tsp baking soda and ½ tsp salt in a large mixing bowl.
Gradually alternate between folding the flour mixture and ⅔ cups of yogurt into the wet ingredients until everything is incorporated and you have a thick cake batter.
Pour the batter over the citrus slices in the cake pan.
Bake for 35 minutes in the preheated oven.
Allow to cool completely. Invert the cake onto a serving plate so that the colorful citrus slices are on display.
Serve large slices of this cake with tea or coffee.
