Whenever I see a cake with mocha in the title, I just know I have to have a slice. That’s why I love to make this Vegan Mocha Cake at home. Rich chocolate cake with a hint of coffee and a dairy-free coffee frosting.
As well as being completely delicious, this cake is very easy to make. Start by sifting dry ingredients together in a bowl. In a separate small mixing bowl, whisk together the wet ingredients. Combine wet and dry ingredients and mix until just combined. Bake in the oven for 30 to 40 minutes. Once the cake cools completely, ice with your favorite dairy-free frosting.
To make Vegan Mocha Cake, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly grease a 9-inch cake pan or casserole dish.
Sift 3 cups of all-purpose flour, 1¾ cups of sugar, ½ a cup of unsweetened cocoa powder, 1 teaspoon of salt, and 2 teaspoons of baking soda together in a large bowl.
In a separate small mixing bowl, whisk together 1¾ cups of coffee, ¾ cups of canola oil, ¼ cup of maple syrup, 2 tablespoons of white distilled vinegar, and 2 teaspoons of vanilla extract.
Create a well in the center of the dry ingredients and gently pour the wet ingredients into it. Carefully fold the wet mixture into the dry ingredients, mixing until just combined.
Pour the cake mixture into the cake pan.
Bake for 30-40 minutes until a toothpick inserted in the center of the cake comes out clean.
Transfer the cake to a wire rack and leave to cool completely before icing with your favorite dairy-free frosting.
Serve at room temperature with a cup of your favorite coffee.
