To make this yummy casserole, start by cooking sausage, green peppers, and onion in a large skillet until the sausage meat is no longer pink. Drain excess fat. Whisk eggs, milk, salt, pepper, and mustard in a large bowl and stir in the sausage mixture, bread, spinach, cheeses, and zucchini. Transfer the casserole mixture to a baking dish. Cover and place in the refrigerator overnight. Cover and bake until a knife inserted in the center comes out clean.
To make the Veggie Sausage Strata, you will need the following ingredients:
Cook 1 pound of sausage with 1 coarsely chopped green pepper and ½ chopped onion in a large skillet over medium heat. When the meat is no longer pink, drain excess fat and set aside.
Whisk together 4 eggs, 1 cup of milk, 1 teaspoon each of salt, pepper, and mustard in a large bowl.
Stir in the sausage mixture, 6 slices of bread cut into pieces, ½ package of frozen chopped spinach, 1 cup of shredded Swiss cheese, 1 cup of shredded Cheddar cheese, and ½ sliced zucchini.
Grease an 9x7-inch baking dish.
Transfer the casserole mixture to the baking dish. Cover and chill in the refrigerator overnight.
Remove the casserole from the refrigerator 30 minutes before cooking.
Preheat the oven to 350 °F.
Cover and bake for 40 minutes.
Uncover and bake for 40-45 more minutes or until a knife inserted in the center comes out clean.
Serve immediately.
