1 cup Sour cream
2 ½ cups Milk 2%

1 (12 oz) bag Frozen peas and carrots thawed

White Cheddar Farfalle with Peas & Carrots is a fantastic midweek pasta dish. It is quick and easy to make. It also tastes fantastic! I use a bag of frozen peas and carrots in this recipe. I usually make this pasta bake in individual ramekins, but you could also use a large casserole dish if you don’t have enough ramekins.

Start by removing the bag of frozen peas and carrots. While the veggies thaw, cook the farfalle pasta according to the package directions. Once the pasta is cooked, start making the sauce by adding garlic powder, flour, salt and pepper to melted butter and adding milk and sour cream. and whisk until smooth for about a minute. Add cheese, peas and carrots and mix with the cooked pasta. Transfer to a baking dish and cook for 25-30 minutes.

Thaw frozen peas and carrots

Remove frozen peas and carrots from the freezer and set aside to thaw for a few minutes.

Cook the pasta

Cook the pasta according to the instructions on the package. Drain the pasta and set to one side.

Heat the oven

Preheat the oven to 350 °F.

Start making the sauce

Meanwhile, melt 6 tablespoons of butter in a large saucepan over medium heat. Add ½ a teaspoon of garlic powder, 4 tablespoons of flour, 1 teaspoon of salt and ½ a teaspoon of pepper. Whisk for about one minute until the sauce is smooth.

Add milk and sour cream

Gradually pour in 2 ½ cups of milk and 1 cup of sour cream whisking constantly until the sauce starts to thicken.

Add cheese

Add 3 ½ cups of shredded cheese and stir until completely melted.

Mix in peas and carrots

Mix in the thawed peas and carrots and stir well.

Add pasta

Stir in the pasta and mix well.

Mix in the sauce

Transfer the mixture to a casserole dish or divide between individual ramekins. Sprinkle the top with ½ cup of cheese.

Bake uncovered in the preheated oven for 25-30 minutes, until the sauce is bubbly.

Serve hot.
