These Zucchini Oatmeal Chocolate Chip Cookies are a really fun thing to make! The zucchini leave little green flecks in the cookies which I think looks really cool. And of course, it’s another sneaky way for me to get more vegetables into my kids without complaints!
To make these cookies, I mix up the cookie dough in different stages. I usually reserve about ⅓ cup of chocolate chips and press them into the tops of dough balls before baking. I think it looks great, but it’s optional! These cookies will keep for a few days in an airtight container.
To make Zucchini Oatmeal Chocolate Chip Cookies, you will need the following ingredients:
Preheat the oven to 350 °F. Line a cookie sheet with parchment paper.
Mix the flour, cinnamon and baking soda together in a large bowl.
Beat the butter, granulated sugar and brown sugar in an hand mixer until creamy.
Add the egg and vanilla to the butter/sugar mixture and mix well. Then add the zucchini.
On a low speed setting, gradually add the flour mixture.
Stir in the oats, walnuts and chocolate chips with a wooden spoon.
Shape the cookies into 2 tablespoon balls. Place them onto the cookie sheet. Allow around 2 inches between cookies because they will spread while cooking.
Bake in the oven for 11-14 minutes until the edges of the cookies have turned golden brown.
Leave the cookies to cool for 2 minutes, then transfer to a wire rack to cool completely.
Serve the cookies with a glass of milk!
