To make Crustless Zucchini Quiche, you will need the following ingredients:
Preheat the oven to 375 °F.
Season the zucchini with salt and toss to coat. Set aside for 20-30 minutes.
Using a linen dishcloths or a cheesecloth, drain the liquid from the zucchini slices and remove all moisture.
In a mixing bowl, lightly whisk the eggs with milk and season with salt and pepper to taste.
Add 1 cup shredded cheese and stir.
In a quiche, baking pan place half the drained zucchini slices over the bottom and sprinkle ½ cup shredded cheddar cheese over. Place a second layer of zucchini slices on top and pour the milk mixture over. Finally top the quiche with sprinkles of the remaining ½ cup shredded cheddar cheese.
Bake the zucchini quiche in the preheated oven for about 50-60 minutes until cooked and top is golden and crisp.
Remove from the heat and serve either warm or cooled for breakfast, brunch or lunch.
