This Zucchini Stuffed with Tuna is one of my favorite family meals. I love the simplicity of using zucchini boats as the vessels for this delicious tuna and zucchini filling. Serve this with a crisp green salad or some garlic bread.
To prepare this dish, start by cutting zucchini in half, and hollowing out the shells. Chop up zucchini pulp and set aside. Mix pulp, tuna, bread crumbs, mozzarella, egg, Parmesan cheese, olive oil, and salt together in a bowl. Fill zucchini shells with the tuna filling and place on a waxed lined cookie sheet. Drizzle with a little olive oil and cook in the preheated oven until cooked through.
