Preheat the oven to 400 °F and grease a large skillet with cooking spray and set aside.
In a mixing bowl, whisk the eggs and salt together.
Add chopped tomatoes, bell peppers, chives and ¼ cup of the cheddar cheese and whisk together until well mixed.
Pour the egg mixture into the large, greased skillet. Sprinkle remaining ¼ cup cheddar cheese over the egg mixture.
Bake in the oven for 15 minutes.
Remove from oven and cool for 5 minutes before slicing and serving.
