In a large bowl, combine 2 cups flour, 1 cup granola, ⅔ cup sugar, 3 teaspoon baking powder, 1 teaspoon salt, ½ teaspoon ground cinnamon and ¼ teaspoon ground nutmeg until well mixed.

Combine wet ingredients

In a separate mixing bowl, whisk 2 large eggs with ⅔ cup unsweetened apple juice and ¼ cup canola oil until well combined.

Combine the wet and dry ingredients until just combined.

Add apples

Fold in 1½ cups of grated apples and mix through.

Prepare baking tray

Grease or line a muffin tray with butter or paper liners and fill with muffin batter.

Bake in preheated oven at 400 °F until cooked and a wooden toothpick inserted into the center comes out clean.
