This Au Gratin Potato Casserole is one of the easiest casserole recipes I know. The ingredients you need to make it are probably in your freezer or store cupboard right now – a bag of frozen hash browns and a can of cream of mushroom soup and some cornflakes. Make it up to 24 hours in advance and add cornflakes and bake right before serving.

To make this couldn’t be easier. Start by combining hash browns, sour cream, shredded Cheddar cheese, a can cream of mushroom soup, 1 small finely chopped onion and some pepper in a large bowl. Spoon the mixture into a baking dish. Top evenly with crushed cornflakes and drizzle with melted butter. Bake in the oven until cooked through bubbly.

Heat oven and prepare dish

Preheat the oven to 325 °F and lightly grease a 13- x 9-inch baking dish with butter or cooking spray.
