To make this baked cheese, start by cutting off the top part of the bread to create a lid. Carefully cut out a circle the same size as the cheese, taking care not to cut through the base of the bread. Pull the bread from the center of the loaf where the cheese will be placed. Tear the bread into small chunks, place on a baking tray and drizzle the chunks with olive oil. Place the cheese in the hollowed-out bread and sprinkle with brown sugar.
