3 Eggs medium
125g Caster sugar
2 tbsp coconut Yogurt or natural yogurt, plus extra to serve
200g Plain flour
2 tsp Baking powder
seeds from 12 Cardamom pods cardamom pods, crushed

This Banana, Coconut & Cardamom Bread recipe is a delicious take on the traditional banana bread. Inspired by my travels in India where cardamom is a key ingredient, I like to add coconut oil and coconut flour to this banana cardamom bread to give it that extra burst of flavor.

This banana cardamom bread is so easy to make too. Start by melting coconut oil or butter. Mash bananas in a large bowl and add the melted oil, eggs, sugar and yogurt. Combine dry ingredients in a separate bowl and pour in the banana mixture. Whisk well until you have a smooth batter. Transfer the bread to a loaf pan and bake in the oven for an hour and ten minutes. If a skewer inserted comes out with wet cake mixture, return the loaf pan to the oven for another 10 minutes and check again.

Steps to make Banana, Coconut & Cardamom Bread

Heat the oven and prepare a pan

Preheat the oven to 320°F. Grease and line a 9 inch loaf pan with butter and parchment paper.

Melt coconut oil

Melt coconut oil in a saucepan or in a bowl in the microwave.

Mash bananas

Mash 2 large bananas in a mixing bowl.

Add oil, eggs, yogurt and sugar

Add the melted oil, 3 eggs and 2 tablespoons of yogurt and 125 grams of sugar to the banana and mix well.

Mix dry ingredients

In a separate bowl, mix 200 grams of flour, 2 teaspoons of baking powder, crushed cardamom seeds and a pinch of salt until fully combined.

Mix wet and dry ingredients

Add the wet ingredients to the flour mixture and mix well until you have a smooth batter.

Transfer the bread mixture to the prepared loaf pan. Bake in the oven for 1 hour and 10 minutes until the top of the cake is golden and risen. A skewer inserted should come out dry with only a few crumbs.

Serve

Serve large slices of this bread while it’s still slightly warm.
