It’s time to break out the waffle iron for these Vegan Triple Berry Waffles. I never need an excuse to make these waffles – they taste great and are packed with plant-based goodness! You can use fresh or frozen berries for this recipe which means that you can enjoy these special waffles all year round.
To make the waffle batter, you simply mix the ingredients together in stages. While the waffles are cooking in the waffle iron, make a berry compote by cooking berries with sugar and lemon over low heat for ten minutes. Just before serving, whip up some coconut cream to dollop on top of the cooked waffles.
To make Vegan Triple Berry Waffles, you will need the following ingredients:
Turn on your waffle iron and leave to preheat.
Mix the oil, milk, sugar and vanilla together in a large bowl.
In a separate bowl, mix the flour, baking powder, and salt together. Add the dry ingredients to the wet and mix well.
Fold in the blueberries carefully using a spatula.
Pour the waffle batter onto the waffle iron in batches and cook according to the manufacturer’s instructions.
Place the mixed berries, sugar and lemon juice in a small pot over low heat. Simmer for 10 minutes or so until berry mixture has thickened. Allow to cool for a few minutes.
Place coconut cream into a bowl. Discard any excess liquid that may have separated from the cream. Using an electric mixer, whip the cream on medium high for 3-4 minutes. Add the powdered sugar and vanilla, and whip for about another minute until stiff peaks form.
Serve the waffles topped with berry compote and a dollop of whipped coconut cream.

I made these Vegan Triple Berry Waffles on a cozy Sunday morning, and my husband and I loved them. They're so simple to prepare, and they taste amazing drizzled with berry compote.
Lemon made it a bit too zesty cause of all the fruit that was sour too but it wasn't bad I still enjoyed it a lot.
Be very very careful with the vanilla extract too much can make the whip taste like crap! I'd say use one tsp instead of two actually.
Not too sure if I like these better than the plain waffles with maple syrup yet but a few more bits and I just might!!
