Ingredients

For the waffles
2 cups Blueberries fresh or frozen
3 cups All-purpose flour
1¾ cup Almond milk
¾ cup Vegetable oil
2 tbsp Sugar
4 tsp Baking powder
2 tsp Vanilla extract
1 tsp Salt
For the berry compote
1 lb Berries mixed, fresh or frozen
¼ cup Sugar
1 tbsp Lemon juice
For the optional coconut whip
1 (12 to 14 oz) can Coconut cream or full fat coconut milk, refrigerated for at least 4 hours
½ cup Powdered sugar
2 tsp Vanilla extract

It’s time to break out the waffle iron for these Vegan Triple Berry Waffles. I never need an excuse to make these waffles – they taste great and are packed with plant-based goodness! You can use fresh or frozen berries for this recipe which means that you can enjoy these special waffles all year round.

To make the waffle batter, you simply mix the ingredients together in stages. While the waffles are cooking in the waffle iron, make a berry compote by cooking berries with sugar and lemon over low heat for ten minutes. Just before serving, whip up some coconut cream to dollop on top of the cooked waffles.

Steps to make Vegan Triple Berry Waffles

Heat the waffle iron

Turn on your waffle iron and leave to preheat.

Mix the wet ingredients together

Mix the oil, milk, sugar and vanilla together in a large bowl.

Combine the dry ingredients

In a separate bowl, mix the flour, baking powder, and salt together. Add the dry ingredients to the wet and mix well.

Add the blueberries

Fold in the blueberries carefully using a spatula.

Cook the waffles

Pour the waffle batter onto the waffle iron in batches and cook according to the manufacturer’s instructions.

Prepare the berry compote

Place the mixed berries, sugar and lemon juice in a small pot over low heat. Simmer for 10 minutes or so until berry mixture has thickened. Allow to cool for a few minutes.

Make the coconut whip

Place coconut cream into a bowl. Discard any excess liquid that may have separated from the cream. Using an electric mixer, whip the cream on medium high for 3-4 minutes. Add the powdered sugar and vanilla, and whip for about another minute until stiff peaks form.

Serve

Serve the waffles topped with berry compote and a dollop of whipped coconut cream.
