You can use fresh or frozen berries for this recipe which means that you can enjoy these special waffles all year round.
To make the waffle batter, you simply mix the ingredients together in stages. While the waffles are cooking in the waffle iron, make a berry compote by cooking berries with sugar and lemon over low heat for ten minutes. Just before serving, whip up some coconut cream to dollop on top of the cooked waffles.

So I followed everything to the T but used blueberry jam instead of fresh blueberries freaking delicious.
WOW these were a blast of flavor in my mouth very good!
Fantastic with some maple syrup and butter these are extra delicious.
Lemon made it a bit too zesty cause of all the fruit that was sour too but it wasn't bad I still enjoyed it a lot.
Be very very careful with the vanilla extract too much can make the whip taste like crap! I'd say use one tsp instead of two actually.
Not too sure if I like these better than the plain waffles with maple syrup yet but a few more bits and I just might!!
