To make the Best Vegan Ratatouille, you will need the following ingredients:
Preheat the oven to 400 °F and prepare a round 9-inch baking dish.
In a large skillet over medium heat, heat 1-2 tablespoons olive oil and add 1 chopped onion. Sauté for 2-3 minutes until translucent.
Add 3 minced garlic cloves and cook for 1 minute more.
Add 1 tablespoon tomato paste and 17.6 ounces strained tomatoes or passata. Season with salt and black pepper to taste and add 1 tablespoon dried Italian herbs. Cover and simmer for 5 minutes.
Pour the tomato sauce into the prepared baking dish. Arrange the slices of zucchini, eggplant, and tomatoes alternately on top of the sauce. Scatter vegan mini mozzarella balls and grated cheese over the vegetables.
Cover the dish with foil and bake for about 30 minutes. Then uncover and bake for 15 minutes more until the veggies are cooked and lightly browned.
