This Black Forest Brownie recipe has all the flavor of my favorite desserts in brownie form. Black forest cake is a chocolate sponge cake which oozes a rich cherry syrup filling. It’s based on the German cherry dessert which comes from the Black Forest region. My take on brownie black forest cake has a boozy kick thanks to the addition of kirsch cherry brandy!
To make these brownies, start by melting butter, sugars, cocoa powder and chocolate together. Add salt, kirsch and eggs and mix through flour and cherries to make the brownie mixture. As the brownies cool, mix whipping cream with kirsch and confectioners’ sugar to make cream with a kick. Serve the brownies with a large dollop of kirsch cream and enjoy!
To make Black Forest Brownies, you will need the following ingredients:
Preheat the oven to 335 °F. Line a 8 by 12-inch baking pan with parchment paper.
Place 200 grams of butter, 225 grams of soft brown sugar, 220 grams of golden caster sugar, 125 grams of cocoa powder and 100 grams of dark chocolate in a saucepan and melt slowly over low heat, stirring occasionally. Once melted, remove from the heat and leave to cool for 5 minutes.
Use a wooden spoon to stir in ¼ teaspoon of salt, 2 tablespoons of kirsch and 4 eggs until the mixture is smooth.
Stir in 125 grams of flour and 250 grams of cherries to the brownie mixture.
Transfer the brownie mixture to the prepared baking pan.
Bake for 30 minutes. Remove from the oven when the brownies are set but still slightly sticky in the center.
As the brownies bake, prepare a large pan of iced water which the brownie pan will fit inside. Once the brownies have a crisp top and wobble only slightly in the centre, remove the pan from the oven.
Place the baking pan in the water bath to cool completely. By doing this, the center will stay soft, but the brownies will set overall.
Whisk 300 milliliters of whipping cream with 2 tablespoons of kirsch and 3 tablespoons of confectioners’ sugar until the cream reaches soft peaks.
Cut the brownies into squares. To serve, sprinkle each brownie with some extra confectioners’ sugar and cocoa powder. Spoon a dollop of kirsch cream on top and add a few extra fresh cherries.
