You don’t need to be a child to enjoy these Cereal Pancakes! I am a mother with 4 children and these cereal treats are one of my favorite morning breakfast ideas.

Little mini pancakes which are super easy to make and I use buttermilk instead of milk for a more dense and creamy texture, but you can use normal milk, if you prefer. Serve in a bowl, drizzled with too much syrup and more milk, if you wish!

Steps to make Cereal Pancakes

Combine dry ingredients

In a bowl, whisk ½ cup of all-purpose flour, ½ teaspoon of baking powder, ½ teaspoon of baking soda, and 1 tablespoon of sugar until combined.

Add egg and buttermilk

Pour in 1 beaten egg and ½ cup of buttermilk then gently whisk again until combined with no lumps. Do not over mix.

Cook pancakes

In a non-stick pan over medium-low heat and lightly brushed with oil, use a squeeze bottle or piping bag to squeeze out mini pancakes or a teaspoon to drop batter and then cook until the mini pancakes begin to bubble. Flip, and cook for another 30 seconds to 1 minute until golden brown on both sides. Scoop out the cooked pancakes and place in a bowl. Repeat with remaining batter.

Serve

Serve with a dollop of butter, drizzles of syrup and some milk, if you wish.
