These Cheesecake Stuffed Baked Apples are my new favorite discovery and I don’t know what has taken me so long to think of these. They look absolutely gorgeous on a table setting and the sweet and sourness from the apples pair perfectly with the soft, oven-baked, cheesecake center filling. If you’re celebrating the beginning of Fall, then you can’t miss out on serving these sweet treats!

Combine cream cheese and sugar

In a small mixing bowl, combine cream cheese and sugar together, until smooth.

Add filling

Stir in vanilla, egg and cinnamon and mix through until smooth.

Prepare apples

Cut the tops of the apples off, and using a teaspoon, scoop out the seeds and the core. Place prepared apples on a baking sheet or a pan.

Stuff apples, ⅔ full, with the prepared cheesecake mixture.

Bake

Bake stuffed apples in the preheated oven at 350 °F for 20-25 minutes until the middle of the cheesecake is set.

Refrigerate

Transfer from the baking sheet to a plate and refrigerate until completely cooled.

Serve chilled or at room temperature, topped with caramel sauce, crushed graham cracker crumbs and pecans, if you wish.
