2 tsp Lemon zest divided
2 tbsp Lemon juice fresh , divided
2 tbsp Parsley fresh chopped
1 tbsp Sunflower seeds roasted
¼ tsp Kosher Salt divided
¼ tsp Black pepper freshly ground, divided
¼ tsp Red pepper flakes crushed
1 (5-oz) Canned tuna solid white albacore in water, drained
2 tbsp Fresh dill chopped
2 tbsp Mayonnaise or plain whole-milk Greek yogurt
1 tsp Dijon mustard
1½ ounces Mozzarella low-moisture , grated
4 thick slices Bread Whole-grain

Extra cheesy toasted sandwiches filled with albacore tuna, mayonnaise and mustard and a spicy olive salsa made from olives, lemon zest, lemon juice, roasted sunflower seeds and crushed red pepper flakes. Combine olive salsa mix

In a mixing bowl, combine ⅓ cup of pitted olives, 1 tablespoon of olive oil, 1 teaspoon of lemon zest, 1 tablespoon of lemon juice, 2 tablespoons of freshly chopped parsley, 1 tablespoon of roasted sunflower seeds, and ¼ teaspoon of crushed red pepper flakes. Stir until everything is well mixed together. Set the salsa aside until serving.

Combine tuna mix

In a mixing bowl, mix 1 can of albacore tuna, 2 tablespoons of dill, 2 tablespoons of mayonnaise, 1 teaspoon of mustard and remaining 1 teaspoon of lemon zest and 1 tablespoon of lemon juice and salt, and black pepper to taste until well combined.

Preheat broiler

Preheat the broiler to high.

Prepare sandwiches

On a baking sheet lined with aluminum foil, place 2 slices of bread and evenly divide the tuna mix between the two then sprinkle grated mozzarella cheese, evenly over the top.

Place in the preheated broiler and cook for about 1-2 minutes until the cheese has melted.

Top toasts with the prepared olive salsa and serve!
