I make this Cherry Pie Filling recipe when I have a lot of cherries and I keep it in my freezer to have on standby when I am craving cherry pie. Sometimes I forget about it until winter and when I remember to use the cherry pie filling in a pie, I am instantly transported to summer again! It’s like a gift to future me!
Making this homemade cherry pie filling couldn’t be easier. I start by heating red cherries in a saucepan until they are soft and the juice bursts out of them. In a separate bowl I mix together sugar and cornstarch which I add to the cherries. Once the filling thickens, I remove the saucepan from the heat and leave the mixture to cool completely before using.
To make Cherry Pie Filling, you will need the following ingredients:
Place 4 cups of pitted cherries in a saucepan. Cover the pan and heat cherries over medium heat for 10 to 15 minutes until they release their juices and start to simmer. Stir often.
In a small bowl, mix 1 cup of white sugar with ¼ cup of cornstarch until evenly combined.
Add the sugar mixture to the heated cherries in the saucepan and mix to combine.
Return the saucepan to a low heat and bring to a simmer. Continue to simmer until the filling has thickened.
Leave the filling cool completely before using.
Use immediately as a pie filling or freeze for later use.

Good but needed a lot more sugar added to it the cherries were slightly sour.
