When I was in college, my roommate was from Russia and his specialty in the kitchen was Chicken and Beef Croquettes – Pozharsky Kotleti as they’re called in Russian. I enjoyed them so much every time he made them, I just had to learn the recipe and I’m sharing it with you today.
To make these croquettes, start by mixing all of the ingredients together in a bowl. You can use a food processor but I like to get my hands dirty making these! My top tip when making these croquettes is to fill up a bowl with some cold water to keep hands moist while forming croquette patties. Place 2 beaten eggs in a second bowl and add Italian bread crumbs to a third bowl. Form the croquettes by shaping them with your hands and dipping them first in beaten egg, followed by breadcrumbs. Saute in batches and serve these delicious croquettes with potatoes, pasta, quinoa or salad – whatever takes your fancy!
To make Chicken and Beef Croquettes, you will need the following ingredients:
Place 3 slices of crustless bread in a shallow bowl with ⅓ cup of milk. Set to one side and leave to soak a few minutes.
In a large mixing bowl, combine 1 pound each of ground chicken and ground beef, ⅓ cup of finely diced onion, 3 tablespoons of melted butter, 2 egg yolks, 2 tablespoons of dill, ½ a tablespoon of salt and ½ a teaspoon of black pepper. Add the milk-soaked bread to the bowl and mix until fully combined.
In a separate mixing bowl, use an electric mixer to beat 2 egg whites on high speed until stiff peaks form. Gently fold the egg whites into the meat mixture until fully combined.
Prepare a bowl with some cold water to keep your hands moist while forming the croquettes. Place 2 beaten eggs in a second shallow bowl. In a third shallow bowl, place 1 cup of Italian bread crumbs.
Wet your hands and form oval-shaped meat patties. First, dip each patty into beaten egg. Let the excess egg drip off before dipping into bread crumbs and place on a plate or cutting board until ready to cook.
Place a large skillet over medium-low heat. Melt 2 tablespoons of butter with 2 tablespoons of oil until the butter sizzles.
Cook the croquettes in batches (around 6 at a time). Cook for about 5 minutes on each side, flipping a few times while cooking. Juices will run clear when the croquettes are cooked.
Serve warm with potatoes, pasta, quinoa or salad.
