This recipe is a low-effort, one-pan dish that requires only eight ingredients and delivers a delicious dinner with easy clean-up in less than 20 minutes. For me, this recipe is the perfect weeknight dinner and my new favorite way to eat chicken. I like to serve this dish topped with fresh basil leaves over whole-wheat pasta and a simple green salad on the side.

Steps to make Chicken Breast with Tomatoes and Garlic

Season chicken

Season 2 pounds chicken tenders with ½ teaspoon dried oregano, ½ teaspoon salt, and freshly ground black pepper to taste.

Cook chicken tenders

In a large pan or skillet over medium heat, heat 1 tablespoon oil of choice and add half of the seasoned chicken. Cook on both sides until golden brown, about 5 minutes. Remove and set aside. Cook remaining chicken and set aside too.

Add garlic and oregano

Add 1 more tablespoon oil if needed, reduce the heat to low, and add 5 chopped cloves garlic and ½ tsp dried oregano. Cook, stirring, for 1 minute.

Cook tomatoes

Add 3 pounds sliced tomatoes, sprinkle with ¼ teaspoon salt and freshly ground black pepper to taste. Increase the heat to medium and cook, stirring gently, for 5 minutes. In case the tomatoes are not juicy enough, pour in some drops of water.

Return chicken to skillet

Turn off the heat and add the cooked chicken back to the skillet. Sprinkle with basil.

Serve

Serve hot with a side of choice and enjoy!
