6 oz Chinese noodles chow mein
2 tbsp Vegetable oil
1 lb Chicken Breast boneless, skinless, or thighs
2 cups Green cabbage shredded
1 cup Carrots matchstick
3 cloves Garlic minced
3 Green onion chopped

What’s for dinner? 20-minute Chicken Chow Mein. It is my go-to recipe when I need a quick weeknight dinner option that is healthy and delicious too. Flavorful chow mein noodles, tender chicken, and yummy veggies get tossed in a coating of a homemade sauce that hits all the umami notes. I love using chicken thighs for this chow mein recipe because they stay tender and juicy while cooking. Feel free to use chicken breast if you prefer leaner meat. 

Make sure you have all the ingredients prepared and ready to toss in as once you start cooking, it only takes 10 minutes of active cooking time. With this recipe, you start by whisking up the sauce. Cook and drain the egg noodles. Heat oil in a wok and stir-fry the chicken along with 1 tablespoon of the prepared sauce. Stir-fry the veggies and toss in the cooked noodles along with green onions, and the remaining sauce. Cook just for another minute and serve immediately. Delicious weeknight dinner!

Steps to make Chicken Chow Mein

Prepare sauce

In a small bowl, whisk together 4 tablespoons low sodium soy sauce, 2 tablespoons low sodium chicken broth or water, 1 tablespoon oyster sauce, 1 tablespoon cornstarch, 1 tablespoon sesame oil, and 1 tablespoon honey or sugar if using and set aside.

Cook noodles

Cook 6 ounces Chow mein noodles according to the package directions. Don’t overcook.

Cook chicken

In a wok or a large skillet over high heat, heat 2 tablespoons vegetable oil and add 1 pound boneless, skinless chicken thighs or breasts cut into 1-inch cubes, and 1 tablespoon of the prepared sauce. Cook until chicken pieces are golden and cooked through, 3-5 minutes.

Stir-fry veggies

Add 2 cups shredded green cabbage, 1 cup matchstick carrots, and 3 minced cloves garlic and stir-fry for 2 minutes.

Add noodles

Add in the cooked and drained noodles, 3 chopped green onions, and the remaining sauce and cook for 1 minute, tossing constantly.

Serve

Serve immediately and enjoy!
