This easy pastry bite recipe is one of my all-time favorites. Made with only six ingredients, they are simple to prep and bake up in less than 20 minutes. This recipe is a spin-off of a brie and cranberry stuffed chicken breast main dish my family adores. These crowd-pleasing canapés combine sweet, tart, and salty flavors to create one of the tastiest party appetizers I’ve ever tried. Bonus, these cheesy chicken pastry bites are quick and impressive.
To make these easy and Quick Chicken, Cranberry and Brie Canapés, you will need the following ingredients:
Preheat the oven to 425 °F/220 °C.
Cut the whole pastry sheet into 16 even squares and the half pastry sheet into 8 even squares.
Line a 24-cup mini muffin pan with pastry squares so that the pastry edges are higher than the muffin holes. Transfer to a freezer for 15 minutes to firm.
Bake for 10 minutes or until lightly golden and crisp.
Using a spoon, gently press down on the pastry to flatten slightly. Fill each hole with a little of the finely chopped smoked chicken breast. Top with a piece of brie and some cranberry sauce. Sprinkle with fresh thyme leaves.
Bake for another 5-7 minutes or until golden and the cheese has almost melted.
Sprinkle with chives and serve!
